- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons sesame oil
- 2 tablespoons cornflour
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 1 large orange, juiced
- 2 tablespoons peanut oil
- 2 teaspoons Sichuan peppercorns
- 1 medium onion, sliced into thin wedges
- 4 cloves garlic , minced
- 1 inch fresh ginger, minced
- 1 green bell pepper, cut into 1 inch pieces
- 1 carrot, cut into ½ inch quarters
- 1 spring onion, sliced
- ¼ cup peanuts
Is that New year’s resolution to do more meatless meals still going strong or has it become a struggle to figure out what to do next? Wonder no further with this delicious take out classic made completely vegan; Kung Pao FunGuy mushrooms!
This is an easy swap that is no less delicious than the original. Add these spicy stir fried mushrooms to rice, noodles, or just grab a bowl on it’s own to enjoy!
DIRECTIONS:
- Place the FunGuy mushrooms into a bowl and drizzle the sesame oil on top. Sprinkle the cornflour over the mushrooms and toss to coat the mushrooms well. Set aside.
- In a small bowl, whisk together the vinegar, soy sauce, and orange juice. Set aside
- Heat the peanut oil in a large wok over high heat. Add the Sichuan pepper corns to the pan and saute for 30 seconds, or until fragrant. Toss in the onion, garlic, and ginger and saute 1 minute. Add the carrot and cook 4-5 minutes, or until starting to become tender.
- Add the mushrooms to the pan and saute them for 3-5 minutes, or until they start to brown. Add the bell pepper and saute until just tender but a vibrant green. Pour the orange juice mixture into the pan and stir well and cook 2 minutes longer. It’s done when the liquid in the pan thickens and becomes a shiny coating on the mushrooms and vegetables. Turn off the heat and add 2/3rds of the peanuts and the white part of the spring onion to the pan and stir to combine.
- Divide the Kung pao mushrooms on to individual plates and top each with the rest of the peanuts and green spring onion tops. Serve immediately.
