- Ingredients:
- 10oz package of FunGuy Mushroom Stuffers
- 3 tablespoons olive oil
- 4 tablespoons white wine vinegar
- ¼ teaspoon dried oregano
- ¼ teaspoon dried basil
- ¼ teaspoon dried marjoram
- ¼ teaspoon dried thyme
- ¼ teaspoon dried rosemary
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon salt
- 1 small onion, diced
- 1 medium pickle, diced
- 2 tablespoons plain Greek yogurt
- 1 tablespoon mayonnaise
- Salt and black pepper to taste
Everyone can agree that a can of tuna is best found in a creamy pickle speckled salad that’s spread between two slices of your favorite sandwich bread. That is until now!
We say don’t make a sandwich with your tuna salad. Instead, pack that classic filling into some spicy marinated FunGuy stuffers for everyone to enjoy.
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Place the mushroom caps to a bowl.
- Add the oregano, basil, marjoram, thyme, rosemary, red pepper flakes, and salt into the bowl. Pour the olive oil and vinegar over the mushrooms and toss well to coat and set aside for 10 minutes to marinate.
- In another bowl mix together the tuna, onion, pickle, yogurt, and mayonnaise. Taste the tuna salad and season with salt and pepper.
- Place the marinated mushrooms onto a serving plate and spoon the tuna salad into each cap until heaping over. Refrigerate until ready to serve.
