- Ingredients:
- 2 15oz cans of chickpeas
- 3 6oz cans of tuna
- 1 jar of marinated artichoke hearts
- 1 small onion
- 3 tomatoes
- 8oz package of sliced FunGuy white button mushrooms
- 1/3 cup mayonnaise
- 2 tablespoons fresh cilantro, roughly chopped
- Salt and Pepper to taste
Every barbecue and potluck requires three things: copious amounts of food on the grill, a ridiculous amount of various salads, and a whole lot of FunGuys!
With this recipe we have two of those taken care of with a FunGuy salad. This isn’t your usual vegetable heavy green salad or the carb loaded pasta variety either; it’s one full of chickpeas, tuna and FunGuy mushrooms to round it out.
It’s also super quick and easy to toss together, so the day can be spent playing outside instead of slaving inside.
DIRECTIONS:
- Drain and rinse the chickpeas in a strainer and put them into a large bowl. Drain the tuna and artichoke hearts of excess liquid and add them to the bowl.
- Peel and dice the onion on a cutting board. Wash the tomato and remove the stem. Dice it and add both to the bowl.
- Next, add in the FunGuy mushrooms, mayonnaise and cilantro to the bowl. Gently stir everything together so as not to break up the mushroom slices. Season with the salt and pepper and stir again to combine.
- Wrap the bowl with plastic wrap and refrigerate until ready to serve.
