• Ingredients:
  • 10oz packages of FunGuy Mushroom Stuffers
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ cup mascarpone cheese, room temperature
  • 1 tablespoon lemon juice
  • pinch of coarse salt
  • ½ cup chopped cherry tomatoes
  • 5-8 leaves fresh basil, chopped

We’re ready for some beautiful weather, good company, and a reason to make these new FunGuy stuffers!

Simple and delicious, these stuffers have it all with smooth creamy mascarpone, fresh ripe tomatoes, and fragrant green basil and a hint of bright lemon flavor that helps tie it all together. 

We know the next picnic, barbecue, or weekend get together is the only the reason you’ll need!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard and place the mushroom caps in a bowl. Drizzle the olive oil over the mushrooms and season them with salt and the minced garlic and toss well.
  2. Heat a skillet over medium-hi heat and add the mushrooms, hole side up, to the pan and allow them to cook 6-8 minutes, turning half way to cook the other side. Pour out any liquid that has accumulated in the mushrooms and pat the cap top dry with a paper towel before transferring to a serving plate, hole side up. 
  3. Mix the mascarpone cheese with the coarse salt and spoon it into the mushroom caps. In another bowl mix the lemon juice, chopped tomato, and basil together and spoon it on top of the stuffed mushrooms. Taste and add more salt if necessary and serve!
