- Ingredients:
- 1 small eggplant
- 2 large bell peppers
- 1 onion, sliced
- 2 large tomatoes
- 8 artichoke heart quarters
- 2 tablespoons olive oil
- 8oz package of sliced FunGuy white button mushrooms
- pinch of coarse salt
- 8 slices of whole wheat bread
- 4 tablespoons sundried tomato pesto
- Arugula
It can be hard to find a delicious vegan sandwich sometimes. The options are usually something nut buttery, or vegaized version of more carnivorous or vegetarian items.
With this vegan FunGuy sandwich, nothing of those other things will be missed or needed!
Rich sundried tomato pesto spread on the whole wheat bread, sautéed eggplant rounds and mushrooms layered with blistered bell pepper, juicy tomato slices, and buttery oil packed artichoke hearts.
It’s really The Ultimate Vegan FunGuy Sandwich and everyone will be asking for more!
DIRECTIONS:
- Remove the stems from the eggplant, bell pepper, and tomato. Thinly slice the eggplant, onion, and tomato into 1/8th inch thick rounds. Cut the bell peppers in half. Cut each of the artichoke quarters in half.
- Heat the saute pan over high heat. Lay the bell pepper strips in the pan, skin side down, and let them blister in the hot pan. Remove the peppers and place them on a plate to cool while cooking the rest.
- Turn the heat down to medium high heat and add the olive oil to pan. rounds in the pan and allow them to cook about 2-3 minutes on each side. Transfer them to a plate to cool. Add the FunGuy mushrooms to the pan and saute them for 4 minutes and transfer them to the plate with the eggplant and peppers. Sprinkle them all with a pinch of coarse salt.
- Peel the skin off of the peppers and cut them into strips.
- Spread the pesto on each slice of bread and layer eggplant rounds, pepper, onion, mushrooms, artichoke pieces, tomato slices, and arugula. Top with another slice of bread.
- Serve immediately.
