- Ingredients:
- 1 lb fettuccine pasta
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lb shrimp, peeled and deveined
- 1 lemon, juiced
- Salt to taste
- Fresh parsley, minced
Just because the heat of summer is still upon us doesn’t mean we can’t get a little comfortable, and what’s more comforting than a plate of pasta? Luckily the FunGuy has just the pasta dish to help with that comfort craving without weighing you down.
Add a bite of sautéed shrimp and mushrooms to some fettuccine and toss with an herbed lemon parsley olive oil and voila! That’s what we call instant comfort.
DIRECTIONS:
- Put fettuccine into a pot of salted boiling water and allow it to cook about 7-8 minutes or until al dente.
- While the pasta is cooking prepare the shrimp and mushrooms!
- Heat olive oil in a sauté pan over medium high heat. Add in garlic and cook until lightly browned, about 1 minute.
- Add in the FunGuy mushrooms and sauté 3-4 minutes with the garlic.
- Add the shrimp to the pan and stir. Cook the shrimp until it’s pink and no longer translucent. The shrimp should curl into a ‘C’ shape when done.
- Once the pasta is cooked add it to the shrimp and mushrooms and add half a ladle of the pasta water and toss together. Season the pasta with lemon juice and salt, tossing again to evenly coat the pasta. Sprinkle fresh parsley on top.
- Serve with a green side salad and enjoy!
