- Ingredients:
- 15oz can chickpeas, drained and rinsed
- 1 tablespoon dried oregano
- 1½ teaspoons paprika
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 8oz package of sliced FunGuy white button mushrooms
- 6 cups turnip greens
- 1 tablespoon white wine vinegar
- Coarse salt
Turnip the flavor for dinner tonight with these sautéed FunGuy mushrooms, fresh spring turnip greens, and spiced chickpeas!
This recipe uses a dash or two of vinegar to calm the bitterness of the greens with a bit of sour, a good amount of olive oil to crisp the herb and spiced chickpeas every so lightly. Just mix them all together with meaty mushrooms to make a quick healthy vegan main for four or a side dish for more!
DIRECTIONS:
- Place the rinsed chickpeas into a bowl. Add the dried oregano, paprika, and half of the olive oil and toss to coat the chickpeas in the seasoning and oil. Set the bowl aside.
- In a large sauté pan over medium high heat add the rest of the olive oil and the garlic, cooking it for 1 minute. Add the FunGuy mushrooms to the pan and sauté them for 4-5 minutes. Add the chickpeas and sauté them for another 5 minutes.
- Add the turnip greens to the pan with the vinegar and stir. Turn down the heat to medium low and put a lid on top to allow the greens to wilt as they cook down for about 5-6 minutes.
- Remove the lid and season the mushrooms, turnip greens, and chickpeas with a sprinkle of coarse salt. Stir once more and turn off the heat.
- Serve immediately.
