- Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons butter
- 1 tablespoon flour
- 1 ½ cups whole milk
- 2 cups frozen or fresh peas
- Salt and black pepper to taste
Spring is finally upon us and that means the table needs some green!
Liven it up with this simple, but versatile, dish of FunGuy mushrooms and peas. Not only is it easy to make, but it can go with everything from mashed potatoes to a roast or even as a standalone side.
DIRECTIONS:
- Heat olive oil in a pan over medium heat. When the oil is hot, add in the onion and cook 1 minute. Add in the garlic and sauté 2 minutes. Lastly, add in the FunGuy mushrooms and sauté for 5 minutes or until browned and tender. Transfer everything to a bowl and cover to keep warm.
- Turn the heat down to medium low, add in the butter and let it melt. Sprinkle the flour over the pan and stir with a whisk until it absorbs all of the butter and forms clumps. Continue to cook for 2-3 minutes, stirring constantly. Pour the milk into the pan a little at a time, constantly stirring to keep it from staying clumped up and becomes smooth.
- Return the mushrooms to the sauce and stir well to combine. Add in the peas and let simmer over low heat until they are cooked through; about 4-5 minutes. Season the mushrooms and peas with salt and black pepper to taste.
- Serve immediately over mashed potatoes, rice, over your favorite protein, or as a side dish!
