- 8oz package of sliced FunGuy white button mushrooms
- 1 small onion, diced
- 1 tablespoon butter
- 4 cups fresh peas
- 2 cups water
- 4 teaspoons plain yogurt
- salt and pepper to taste
No other vegetable seems to spring to mind like bright fresh green peas when the season of the same name is mentioned. Sweet peas are also so versatile and great any time of year, but only when the flowers are blooming and the rains are making the world come back to life do they get the attention they so deserve.
That’s why the FunGuy has the perfect spring fresh soup that’s full of vibrant peas and our favorite earthy mushrooms.
DIRECTIONS:
- Heat the butter in a medium sized pot over medium-high heat. Add in the FunGuy mushrooms and onion and saute for 2-3 minutes. Transfer half of the mushrooms to a small bowl and set aside.
- Add peas and water to the pot and bring to a boil. Allow to cook an additional 5 minutes. Turn off the heat and blend the soup with a hand blender. Season with salt and pepper and return the reserved mushrooms to the pot.
- Serve immediately.
- If fresh peas aren’t available use frozen peas instead.
