• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 12 oz beef steaks, cut into 4 equal pieces
  • 3 tablespoons olive oil, divided
  • 1 medium onion
  • 2 tablespoons white wine vinegar
  • 1 tablespoon flour
  • 1 teaspoon dried dill
  • ½ cup milk
  • 1 cup sour cream
  • Salt and freshly ground black pepper

Don’t be sour about summer being over. Use it as an excuse to grill up a good hearty steak and some seriously delicious FunGuy mushrooms! 

These mushrooms and steaks have a flavor much like stroganoff, but without the long cooking time and with a more rich and creamy sauce. It also leaves enough room on the plate for some roasted potatoes and a side salad, unlike all those pesky traditional noodles.

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Peel the onion and cut it in half. Cut the mushrooms into quarters and the onion into thin half-moon slices and set aside. Season the steaks with a pinch of salt and black pepper on each side. 
  2. Lightly oil a grill pan with 1 tablespoon of oil and place it on the stove top over high heat. Once the pan is very hot add the steaks to it and allow them to sear 2 minutes on each side. Continue to cook and flip every minute for 7-8 minutes or until a thermometer reads 130F for medium-rare. Cook longer for more done, and less for a rarer steak. 
  3. Remove the steaks and allow them to rest 10 minutes with a piece of aluminum foil tented over it them and prepare the mushrooms and sour cream sauce. 
  4. Heat 1 tablespoon of the olive oil in a sauté pan over medium high heat. Once the oil is hot add in the onion and cook 1 minute. Add in the mushrooms and cook 5-6 minutes or until tender. Add the white wine vinegar to the pan and deglaze it, scraping any crispy bits from the bottom and letting the liquid evaporate as it cooks. 
  5. Add in the last tablespoon of olive oil and stir. Sprinkle the flour and dill into the pan and stir it into the oil to make a paste. Allow it to cook 1-2 minutes, stirring frequently so it does not burn. Pour in the milk and stir to make a thick sauce. Turn off the heat and stir in the sour cream. 
  6. Serve the steaks immediately with the sour cream mushrooms on top!
