- 2 tablespoons butter
- 4 shallots, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup vegetable broth
- 2 8oz package of sliced FunGuy white button mushrooms
- 1/2 cup sour cream
- Salt and pepper to taste
- Fresh parsley, roughly chopped
With summer right around the corner and the weather finally acting like it, it’s time for potluck and barbecue season! That means lots of hamburgers, hot dogs, and the crispy crunchy chips and dips.
Might we suggest a dip that not only is tasty, a little different and completely Fun to try? It’s not just good for chips either; it’s mighty good on some healthy celery sticks and baby carrots too!
DIRECTIONS:
- Melt the butter in a sauce pan over medium heat. Add in the shallots and garlic and sauté for 2 minutes. Deglaze the pan with the vegetable broth, scraping the bits of shallot and garlic from the bottom of the pan and allowing the liquid to reduce. Toss in the FunGuy mushrooms and sauté for 5-7 minutes or until tender and liquid is gone. Remove the mushrooms from heat and allow to cool for 3-5 minutes.
- Place mushrooms and sour cream into a bowl and season with salt and pepper. Stir well to combine and sprinkle fresh parsley on top. Wrap with plastic and place in the refrigerator to cool until ready to eat
- Serve with chips, crackers, or even veggie sticks!
