- Ingredients:
- 2 teaspoons sesame seeds
- 2 teaspoons dried onion flakes
- 2 teaspoons dried garlic flakes
- 2 teaspoons poppy seeds
- 2 teaspoons coarse salt
- 10oz packages of FunGuy Mushroom Stuffers
- 2-3 tablespoons olive oil
- ½ cup plain cream cheese, room temperature
- 2-3 oz smoked salmon
Blintzes and blinis are delicious brunch menu items, but the FunGuy believes everything’s good at brunch time. Everything “bagel” stuffers that is!
These quick and easy stuffers are rolled in a savory mix of sesame and poppy seeds, dried onion and garlic flakes, and a hefty pinch of coarse salt just like your favorite bagel. Just stir up a bit of that seasoning with cream cheese to fill and top with smoked salmon for the perfect brunch bite!
DIRECTIONS:
- Preheat oven to 375F. Line a baking sheet with parchment paper.
- In a small bowl mix the sesame seeds, dried onion and garlic flakes, poppy seeds, and salt together.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and mince them on a cutting board. Lay the mushroom caps on the prepared baking tray hole side up, and spread the minced mushroom stems in an even single layer next to the mushrooms. Drizzle the mushroom caps and minced stems with the olive oil. Roll the mushroom caps in the oil to coat and season the caps and stems with about half of the everything bagel seasoning
- Place the tray in the oven and let the mushrooms cook about 15 minutes. Remove the mushrooms from the oven and pour out any liquid that has accumulated in the caps and transfer to a plate. Transfer the cooked crispy mushroom stems to the bowl with the remaining seasoning and mix. Reserve a third of this mixed seasoning for topping the filled mushrooms.
- Mix the cream cheese with the other half of the everything bagel seasoning and crispy chopped mushroom stems. Spoon the cream cheese into each mushroom cap, top with a piece of smoked salmon, and sprinkle with the seasoning.
- Serve immediately!
