- Ingredients:
- 7oz glass noodles or rice vermicelli
- Water for boiling
- 8oz package of sliced FunGuy white button mushrooms
- 1 tablespoon of sesame oil
- 1 teaspoon rice wine vinegar
- 1 ½ teaspoons soy sauce
- ¼ cup teriyaki sauce
- Pinch of salt
- 6oz salmon filet
- 1 tablespoon olive oil
- ½ red bell pepper, thinly sliced
- ½ yellow bell pepper, thinly sliced
- ½ green bell pepper, thinly sliced
- ½ small red onion, thinly sliced
- Cilantro (optional)
- Black sesame seeds (optional)
It’s been said that one should eat “the rainbow” to maintain a healthy diet. Usually they are referring to meals spaced out over a long period of time, but we say why not try it in one sitting?
This teriyaki bowl has everything you need for a vibrantly colorful meal! Crisp bell peppers, leafy cilantro, melt in your mouth salmon and a handful of sticky sweet teriyaki FunGuy mushrooms all on a bed of cool glass noodles.
Eating a rainbow has never been so delicious!
DIRECTIONS:
- Bring a pot of water to a boil over high heat. Add the noodles to the pot and allow them to cook 1-2 minutes or until tender and elastic. Drain the noodles of excess water and rinse with cold water. Set aside and allow to cool.
- Place the FunGuy mushrooms into a bowl. In another small bowl mix together the oil, vinegar, and teriyaki and pour it over the mushrooms. Stir well so the mushrooms are completely coated.
- Heat a non-stick pan over medium high heat. Toss in the mushrooms and cook 5-6 minutes, or until tender, stirring frequently so that it doesn’t stick. Transfer the cooked mushrooms to a bowl and cover to keep warm. Reserve any teriyaki sauce at the bottom of the pan.
- Lay the salmon on a cutting board and remove any stray bones and skin. Slice the salmon thinly and season with a pinch of salt.
- In a clean non-stick pan, heat the olive oil over medium heat. Lay the salmon slices in the pan and cook 4-6 minutes, turning each minute, until it has a lightly browned crust and is cooked through.
- To assemble the bowls start with the glass noodles on the bottom then arrange the red, yellow, and green bell pepper slices in a half circle around the bowl. Next, lay the salmon slices onto the noodles next to the red pepper, and the mushrooms next to the salmon. Add a bit of red onion to the middle and a bit of cilantro and black sesame seeds as desired. Pour the rest of the teriyaki sauce from the mushrooms on top.
- Serve immediately or at room temperature!
