- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 4 tablespoons olive oil, divided
- 4 boneless skinless chicken breasts
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 sprig fresh rosemary, stem removed and roughly chopped
- 1 large onion, sliced
- 2 cloves garlic, minced
Tired of the frigid, soggy weather and dreaming for the searing summer heat? Well that’s quite a ways off, but you can still get your sear on in the kitchen!
Grab up a good pan, some chicken, FunGuy mushrooms and onions and you’re on the way to getting a dish that will get a golden tan even if you can’t.
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends. Season both sides of the chicken breasts with salt, pepper and rosemary.
- Heat the olive oil in skillet over medium high heat and add in the garlic, allowing it to cook 1 minute. Next add in the onions and reduce the heat to medium, stirring occasionally to prevent the onions from sticking. Cook 10 minutes or until the onions have become soft and starting to darken.
- Turn the heat back up to medium-high and push the onions to the side, making room for the chicken breasts to sit in the pan. Sear each side of the chicken, about 4 minutes each. Add the mushrooms and allow them to brown on the top of the caps; approximately 3-4 minutes.
- Reduce the heat to medium low and cover the pan, allowing the chicken to cook another 5-7 minutes, the juices from the vegetables to evaporate and the onions to finish caramelizing.
- Serve immediately!
