- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 1 cup cherry tomatoes
- 1 8 ounce wheel of brie
- 1 tablespoon olive oil
- Pinch of salt
- 4 fresh basil leaves
Kitchens everywhere this summer are being attacked by well-meaning neighbors and their bushels of sweet red juicy tomatoes! Don’t be a tomato victim, be a hero with this roasted cherry tomato and FunGuy mushroom topped brie cheese. It’s quick, it’s easy, and everyone will be asking for more brie please! DIRECTIONS:
- Preheat the oven to 375F.
- Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the ends. Cut the mushrooms into quarters. Clean the tomatoes and remove the stems before cutting them in half.
- Place the brie on a parchment lined baking sheet or in an oven safe dish and top with the mushrooms and tomatoes. Drizzle the olive oil on top and sprinkle with a pinch of salt.
- Put the mushroom and tomato topped brie into the oven. Allow it to roast 10-15 minutes or until the cheese has melted in the center and the mushrooms and tomatoes have cooked through.
- Just before removing the brie prepare the basil leaves by stacking the leaves and rolling them up. Once rolled up cut along it to make tiny ribbons.
- Remove the brie from the oven and top the tomatoes and mushrooms with the fresh basil.
- Serve immediately with crackers, toast or with hunks of soft fresh bread!
