- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 3 tablespoons olive oil, divided
- 1 ½ cups canned chickpeas, drained and rinsed
- 1 garlic clove
- ½ red bell pepper
- 2 tablespoons tahini paste
- 1 lemon, juiced
- Salt to taste
- 4 large flatbreads or tortillas
- 1 red onion, thinly sliced
- 2 oz feta cheese
- Red leaf lettuce
- Cilantro (optional)
These Mediterranean wraps with sautéed lemon FunGuy mushrooms, deliciously quick and creamy homemade red pepper hummus, and crumbled feta cheese are the perfect summer sandwich alternative!
We’re sure that these are going to make it into your lunch box or picnic basket all summer long.
DIRECTIONS:
- Heat one tablespoon of olive oil in a sauté pan over medium high heat. Once hot, add in the FunGuy mushrooms and sauté 3-4 minutes or until browned. Season the mushrooms with half of the lemon juice, salt to taste, stir well, and turn off the heat.
- Place the chickpeas, garlic, bell pepper, tahini, and the rest of the lemon juice and olive oil into a blender or food processor and blend until smooth and creamy. Taste and season with salt and blend for 10 seconds more to incorporate.
- To assemble the wraps spread the prepared red pepper hummus on each of the flatbreads and layer with sliced red onion, crumbled feta, red leaf lettuce and cilantro. Top with the prepared mushrooms down the middle and roll up to wrap. Cut each in half and serve immediately or refrigerate and serve within 24 hours.
