- 1 ½ head red leaf lettuce
- 2 pint cherry tomatoes
- 1 small white onion, thinly sliced
- 1 cucumber, thinly sliced
- ½ cup black olives, pitted
- 8oz package of sliced FunGuy white button mushrooms
- 4 basil leaves
- ¼ cup extra virgin olive oil
- 2 tablespoons vinegar
- salt
- fresh ground black pepper
Beat the heat this weekend by taking vacation with the FunGuy! We don’t mean run away with a mushroom, instead live your Mediterranean fantasy vicariously through your taste buds with a healthy salad.
Not just any salad, but one reminiscent of the food along the Mediterranean sea, full of cherry tomatoes, black olives and loaded with FunGuy mushrooms.
We say, if you can’t go, let your mouth do the traveling for you!
Mediterranean FunGuy Garden Salad
Prep time: 10 minutes
Servings: 4
DIRECTIONS:
- Wash lettuce and cherry tomatoes thoroughly. Shake off excess water from the lettuce and break leaves into bite sized pieces and place in a large salad bowl.
- Toss cherry tomatoes, onion, cucumber, olives and FunGuy mushrooms into the bowl. Wash the basil and pat dry with paper towels before cutting it into thin ribbons. Add basil to the salad.
- In another small bowl, whisk together olive oil and vinegar. Season with salt and black pepper to taste. Pour the dressing over the salad and toss well to coat the salad evenly.
- Serve immediately.
This can be a large salad for a main dish or broken up into smaller portions as a side dish. If you want to prep the salad early, wait to dress it when you’re ready to serve.
