- Ingredients:
- 10 oz package of FunGuy Mushroom Stuffers
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, minced
- 1 red chili pepper, minced
- ½ teaspoon cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ cup queso fresco
- 3 tablespoons sour cream
- Red chili oil
- Black sesame seeds (optional)

Not for the weak at heart nor ideal for little taste buds, these are just right for the spice lover that needs a bit of bite after all the festive sweets.
DIRECTIONS:
- Preheat oven to 350F.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet. Roughly chop the mushroom stems on a cutting board and set aside.
- Heat olive oil in a sauté pan over medium high heat. Add the garlic, onion, and chili pepper to the hot pan and sauté for 1 minute. Next, toss in the mushroom stems and sauté another 2 minutes. Season the mushroom mixture with the cumin, paprika and salt, stirring well to combine.
- Transfer the mushroom mixture to a bowl and add in the quesco fresco. Mix the filling together before spooning it into each mushroom cap. Place the baking tray into the oven and allow the mushrooms to bake for 20 minutes.
- Remove the mushrooms from the oven and top with a dollop of sour cream and a swirl of red chili pepper oil and a sprinkle of black sesame seeds for garnish.
