• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 pound pork loin
  • 1 cup barbecue sauce
  • ½ cup pineapple juice
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 pineapple
  • 1 large bell pepper
  • 1 large red onion

When a tropical Hawaiian getaway just isn’t on the nearby horizon, then get into the kitchen and teleport there through your taste buds instead! 

Skewers of sweet and tangy barbecue pork and FunGuy mushrooms sewn between chunks of fresh pineapple, peppers, and onions will do just the trick. 

The grass skirts and coconut drinks are optional, but highly recommended!

DIRECTIONS:

  1. Preheat the grill on high or start the coals so they heat up while preparing the ingredients. 
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth and place them in a large bowl. Lay the pork loin on a cutting board and cut it into 1 ½ inch chunks and add to the bowl with the mushrooms. 
  3. In another bowl whisk together barbecue sauce, pineapple juice, soy sauce, and ginger. Pour it over the mushrooms and pork and mix well to coat them well. Cover the bowl and set aside while preparing the other vegetables. 
  4. Cut the skin off the outside the pineapple and discard it, then cut it into about 1 inch thick rings. Cut the sides off around the core and discard the core of the pineapple before cutting the sides into 1 inch cubes. 
  5. Peel the onion, remove the end and cut it into one inch sized pieces. Remove any pieces that are smaller and use in another recipe. Remove the stem and seeds from the pepper and cut it into 1 inch size pieces as well. 
  6. To assemble the skewers alternate bell pepper, onion, pork, pineapple, mushroom and then repeat until the skewer is full. If using wooden skewers, soak them in water for about 30 minutes before assembling. 
  7. Place the assembled skewers on the grill, turning frequently for 5 to 10 minutes or until meat is browned and cooked through and char marks form on the pineapple and mushrooms. 
  8. Allow the skewers to cool 3-5 minutes before serving.
