• INGREDIENTS:
  • 6 cups stale bread cubes: half white, half brown
  • 3 large eggs, lightly beaten
  • Pinch of saffron threads
  • 1 cup milk
  • ½ cup FunGuy mushrooms, finely chopped
  • ½ cup chopped celery
  • 1/3 cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 Tablespoons butter, melted

Oh Thanksgiving, you’re so cute! The way you raise everyone’s culinary expectations, then make us to cook a meal for 300 people using a two burner stove… it’s adorable. But this year we’ve got your number. This year we are thankful for FunGuy Mushrooms, which we will use to make a stuffing so delicious, so divine, no one will grumble and order pizza.

DIRECTIONS:

Buy 2 loaves of bread a couple of days before. Leave them out on the table unwrapped then in the morning, realize they’ve gone stale. Smack your forehead and whisper hoarsely to yourself “Now what?” Here’s what:

  1. Preheat your oven to 350 degrees. Cut the bread into 6 cups of 1 inch (give or take) cubes.
  2. Place the cubes in a large bowl. Pour the beaten eggs over them.
  3. Crush the saffron and sprinkle over the bread.
  4. Add all other ingredients and toss gently as you would a salad. Don’t mash everything together. This isn’t a Play-Doh project. Gently, kid. Gently.
  5. Spoon this delicious mixture into a greased baking pan or an oven proof casserole dish and bake in the preheated oven for 30 to 35 minutes until golden brown on the top.

Or, stuff it in a TURKEY! Cook the turkey per instructions. Don’t worry about the stuffing—its job is to supervise the inside of that bird and make sure nothing dries out. It’ll do fine.
