- Ingredients:
- 10 oz package of FunGuy Mushroom Stuffers
- 1 tablespoon olive oil
- 1 avocado
- ½ small onion, diced
- 2 tablespoons sour cream
- 1 lime, juiced
- 1 tablespoon chopped fresh cilantro
- Salt to taste
- 1 slice of thinly sliced ham
- ½ teaspoon red pepper flakes
Make it your goal this football season to make some truly game worthy eats! Start the season off with a plate full of these Guacamole stuffed FunGuy “Footballs,” they are super quick to whip up and toss in front of your game-loving guests.
And if you have a little extra ‘mole, there’s no penalty received, just add a bowl of tortilla chips on the side!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet. Discard the stems.
- Heat olive oil in a sauté pan over medium high heat. Lay the mushrooms into the pan and allow them to cook 2-3 minutes or until browned. Turn and cook another 1 minute. Transfer the mushrooms to a paper towel lined plate to remove any excess oil.
- Lay the ham in the pan and allow cook 1-2 minutes on each side or until lightly browned and the edges have crisped.
- While the mushrooms and ham cool slightly, prepare the guacamole.
- Cut the avocados open and spoon out the green flesh and place it in a bowl. Mash the avocado with a fork before adding in the onion, sour cream, lime juice, and cilantro. Stir everything together to mix well, season with salt, stir again and taste.
- Spoon the guacamole into each mushroom cap. Lay the ham on a cutting board and cut it into very thin strips. Lay the ham strips across the mushrooms to make the laces for the mushroom footballs. Sprinkle with red chili flakes and extra cilantro.
- Serve immediately!
