• INGREDIENTS
  • 8oz sliced FunGuy white button mushrooms
  • 1 small zucchini
  • 1 small onion
  • pinch of salt
  • 4 oz shredded cheese
  • 8 small wheat tortillas
  • 1 tablespoon olive oil

The Aztecs believed ingesting mushrooms would help them find lost objects. One thing that’s definitely not lost is the flavor in this quesadilla filled with grilled zucchini and – you guessed it – FunGuy Mushrooms!

DIRECTIONS:

  1. Thinly slice zucchini and onions and set aside.
  2. Using a paper towel, brush a grill pan with olive oil and place on a stove over high heat.
  3. Once the pan is hot, lay the zucchini slices in an even layer on the grill pan to cook for approximately 1 minute, or until grill marks show through. Transfer cooked zucchini to a plate and repeat with the rest.
  4. Grill onion slices and mushroom slices on the grill pan just like the zucchini and transfer to the plate once cooked through. Sprinkle with salt and toss together.
  5. Layer one half of each tortilla with ½ oz cheese and a bit of the zucchini, onion and mushrooms.
  6. Top with another ½ oz cheese and fold the tortilla over.
  7. Place folded tortilla on the grill pan and grill until cheese has melted, about 2-3minutes. Repeat until all the filling, cheese and tortillas are gone!
