- Ingredients:
- 10oz packages of FunGuy Mushroom Stuffers
- 2 tablespoons olive oil, divided
- pinch of salt
- ¼ cup cream cheese
- 3 tablespoons shredded mozzarella cheese, divided
- 2 teaspoons chopped fresh oregano leaves
- 2 teaspoons chopped fresh basil
- 1 teaspoon minced fresh thyme
Summer is upon us and as any FunGuy knows that means it’s time to fire up the grill! However, in the rush to get to some burgers, kabobs, or even some grilled vegetable stacks, our favorite appetizer (stuffed FunGuy Mushrooms!) often don’t get invited to the party.
DIRECTIONS:
Let’s change that with these cheesy herb filled FunGuy stuffers that can be easily tossed onto the grill and served to all of your hungry family and friends!
- Build a medium sized fire with charcoal in an out door grill
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Put the mushroom caps into a bowl. Add half of the olive oil and a pinch of salt to the mushrooms and toss to coat. Place the mushroom caps on a plate, hole side up.
- In another bowl, mix the cream cheese, half of the mozzarella, and the herbs together very well. Spoon the cheese and herb mixture into each mushroom cap and set them aside until the grill is ready to use.
- Once the grill is hot and ready to be used, lightly brush the other half of the olive oil over one side of a grill mat with a paper towel before placing it on the hot grill. Transfer each of the mushrooms to the grill mat and sprinkle the left over shredded mozzarella on top of each. Allow them to grill 5-6 minutes or until the cheese has melted and the mushrooms have grill marks. Transfer the finished mushrooms back to a plate.
- Allow these cheesy herb stuffed mushrooms to cool a couple of minutes before serving!
