- Ingredients:
- Water for boiling
- 1 pound fresh potato gnocchi
- 2 tablespoons olive oil
- 1 shallot, minced
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons white wine or vegetable broth
- ¼ cup cream
- 2 tablespoons freshly minced sage
- Fresh ground black pepper
- Salt to taste
Creamy sauces, earthy mushrooms, and soft pillows of potato gnocchi are soon to be a thing of the past! They’ll soon be replaced by the fresh salads, meaty hamburgers and sweet ice creams of summer, but there’s still time!
Just toss together a quick FunGuy style meal using all three and you can squeeze in one more comfort food before you have to try to squeeze into that summer wardrobe.
DIRECTIONS:
- Bring the water to a boil and add in the gnocchi. Cook the gnocchi until it floats to the surface then drain of excess water.
- In a large sauté pan, heat the olive oil over medium high heat. Add in the shallot and cook until translucent; about 2-3 minutes. Add in the mushrooms and cook another 2 minutes or until lightly browned. Deglaze the pan with the wine and scrap the bottom of the pan to loosen the browned bits. Pour in the cream and half of the sage then bring it to a boil and let the sauce thicken; another 2-3 minutes.
- Transfer the cooked gnocchi to the sauce, season with salt and toss well to coat. Cook another 2 minutes just to warm the gnocchi.
- Serve warm with fresh black pepper and the left over sage sprinkled on top.
