• Ingredients:
  • 1 large white onion
  • 4-6 garlic cloves
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8oz package of sliced FunGuy white button mushrooms
  • 5.5 oz wheel of Camembert cheese
  • 2-3 tablespoons balsamic vinegar, divided
  • coarse salt
  • crackers or toasted bread

Whether it’s time to party with a crowd or just a fun family night at home, the FunGuy has just the easy buttery cheesy and rich dish to spread on chunks of toasted bread or crunchy crackers! 

This isn’t just some whipped up cream cheese spread though. This is melted baked Camembert cheese with rich balsamic caramelized onions, garlic, and our FunGuy mushrooms on top. Yes, it does take some attention and time to get the right caramelized sweetness out of those onions, but it’s worth the effort when combined with our sliced button mushrooms and a drizzle of balsamic to bring it all together! 

DIRECTIONS:

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. On a cutting board, peel the onion, cut it in half and then slice thinly. Peel the garlic and cut into thin slices. 
  3. In a large sauté pan over medium heat, melt the butter in with the olive oil. Once the butter has melted add the garlic and onion to the pan and cook 2-3 minutes or until the onion has started to soften, stirring occasionally to spread them out in the pan. Add the FunGuy mushrooms to the pan and stir well and reduce the heat to medium low.  Allow the mushrooms to cook with the onions until they’ve browned and the onions have caramelized a bit, stirring occasionally so nothing sticks to the pan, for about 15-20 minutes
  4. Unwrap the Camembert and place it in an oven safe dish. Top the cheese with the caramelized onions, garlic, and mushrooms. Drizzle half of the balsamic vinegar over the cheese and sprinkle with a pinch of coarse salt. 
  5. Place the Camembert with onions and mushrooms into the oven and allow them to bake 8-12 minutes, or until the cheese has melted. Remove the cheese and mushrooms from the oven and drizzle with the remaining balsamic if desired, and allow to cool 5 minutes. 
  6. Serve the caramelized onions, garlic, and mushrooms with baked Camembert
