- 3 tablespoons olive oil
- 6 garlic cloves, thinly sliced
- ½ red onion, thinly sliced
- 1 small red chili, thinly sliced
- 8oz package of sliced FunGuy white button mushrooms
- 1 lemon, juiced
- 4 chicken breasts, cut into ½ inch strips
- pinch of coarse salt
- fresh cilantro, chopped
An unknown wise person once said,“Shallots are for babies; onions are for men; garlic is for heroes.” If that’s the case, then this recipe is destined for the truly heroic!
Like the heroic pairing of old, macaroni and cheese, FunGuy mushrooms pairs up with garlic in order to defeat dinner time hunger.
Be warned though, this dish isn’t suggested for first dates, second dates or business lunches. In fact, it’s probably best served at home, where no one can get accidentally breathed on.
DIRECTIONS:
- Heat the olive oil in a large sauté pan over medium-high heat. Add in the garlic, onion and chili and sauté until garlic is browned and onion is translucent. Add in the sliced FunGuy Mushrooms and cook 5-6 minutes, stirring frequently. Transfer mushrooms to a bowl, but leave the oil in the pan.
- Place the cut chicken into the pan in a single layer and allow to cook, without stirring, for 2 minutes. Turn the chicken over and brown the other side for another 2 minutes. Reduce heat to low and cover with a lid and allow the chicken to cook 4-5 minutes longer.
- Remove the lid and add the mushrooms back into the pan and stir to combine. Season with salt and fresh cilantro.
- Serve hot along side rice, pasta or potatoes!
