- 8oz packages of whole FunGuy white button mushrooms
- 1 onion, sliced
- 2 tomatoes, cut into wedges

- black pepper
- 2 sprigs fresh oregano
- oregano leaves for garnish
Summer’s end is all about the garden to table fresh foods. There are ripe vegetables and green herbs everywhere you look! We can’t help but want to include all of them.
Here’s a recipe for a quick and easy side dish using some of the FunGuy’s seasonal favorites like fragrant ripe tomatoes and mellow thyme!
DIRECTIONS:
Brush debris from the mushrooms with a damp paper towel and trim the ends.
Heat olive oil in a skillet over medium-high heat. Place FunGuy mushrooms in the skillet, cap side down and allow to cook 2-3 minutes or until just starting to brown. Add onions to the pan and stir together with mushrooms. Cook another 5-6 minutes or until onions have softened a bit.
Add tomatoes and sprigs of oregano to the skillet and stir again. Cook until tomatoes have softened and the edges just start to caramelize; about 3-5 minutes. Season with salt and pepper and remove oregano sprigs from the pan.
Garnish with fresh oregano leaves and serve.
