- Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 large carrot, diced
- 8oz package of sliced FunGuy white button mushrooms
- 1 cup wild rice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- 2 cups vegetable broth
- 3 cups water
- ¼ cup frozen green beans
- ¼ cup frozen peas
- Salt to taste
Have a hankering for some beef barley soup? Then try this recipe for FunGuy mushrooms and wild rice soup! It’s just like the classic beef barley, except it has no beef or barley.
Okay, well maybe not exactly the same and while it may be something completely different than beef barley soup, we guarantee it’s still healthy and delicious. It’s also a fantastic vegetarian alternative and can be made in a pinch when the pantry is lacking barley!
DIRECTIONS:
- Heat the olive oil in a soup pot over medium-high heat. Add the onion and sauté 1 minute. Add the garlic and sauté 2 minutes. Add the carrot and saute 4-5 minutes. Add the mushrooms and wild rice cook 3-4 minutes and stir well to coat the rice and mushrooms with the oil. Cook 3-5 minutes or until the rice has lightly toasted. Stir in the oregano, thyme, and black pepper.
- Add the vegetable broth and water to the pot and stir well to combine. Bring the pot to a boil, then reduce the heat to medium-low and allow it to simmer 25 minutes or until the rice has cooked all the way through. Add in the green beans and peas to the pot, stir well, and cook 2-4 minutes more. Taste and season with salt as needed.
- Serve immediately.
