• Ingredients:
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 clove
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 ½ cup shredded red cabbage
  • 1 15oz can of chickpeas
  • 2 teaspoons curry powder
  • ½ teaspoon ground turmeric
  • 1 teaspoon ground coriander seeds
  • ¼ teaspoon cayenne pepper flakes
  • A pinch of salt
  • Fresh cilantro

Every FunGuy should start off that New Year’s resolution to eat healthier the right way with a warm, filling salad. One made with chickpeas, mushrooms, cabbage and then spiced with curry and chilli flakes to give a solid kick to the tastebuds.

At least you won’t be able to blame it on the food being bland or not tasty when you go back to your pre-resolution ways, because this recipe will be sure to stick with you!

DIRECTIONS:

  1. Heat the oil in a large pan over medium high heat. Add in the cumin seeds, clove, cinnamon stick, and bay leaf and cook until the cumin seeds start to crackle and pop. Next add in the onion and garlic and cook 2 minutes. Add the FunGuy mushrooms to the pan and sauté until browned; about 4 minutes. When the mushrooms are browned toss in the cabbage and stir to combine. Add in the curry, turmeric, coriander, pepper flakes, and salt. Cook 7-8 minutes or until tender.
  2. Add the chickpeas to the pan and toss together, cook until the chickpeas are warmed through. Add fresh cilantro just before serving warm.
