• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 cup flour
  • 3 eggs, beaten
  • 2 cups bread crumbs
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 teaspoon Cajun spice
  • Light oil for frying
  • 1 lemon
  • 4 short French bread rolls
  • ¼ cup Remoulade sauce
  • 1 large tomato, thinly sliced
  • Lettuce
  • Pickles

Don’t be a poor boy this summer, be a FunGuy with a delicious po’boy to eat!

While this may not be your traditional New Orleans classic, this FunGuy version uses plenty of Cajun spice to give these fried mushrooms a tasty vegetarian friendly option when that particular sandwich craving hits!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Cut the mushroom caps into halves or in quarters if very large. 
  2. Using three shallow bowls, pour flour into one, the beaten eggs in another and whisk bread crumbs with garlic, salt, pepper, paprika, and Cajun spice in another bowl. 
  3. Roll each mushroom in the flour, then into the egg, and lastly into the bread crumbs, being careful to coat each mushroom. Once coated, place the mushrooms on a large plate and set aside.
  4. Pour oil in a deep frying pan, about 1 inch deep. Heat the oil over medium high. The oil is hot enough when a 1 inch cube of bread can fry in 30 seconds.
  5. With tongs, carefully place mushrooms 4-5 at a time into hot oil and allow to fry 3-4 minutes, turning halfway if needed to get all sides golden brown. Transfer cooked mushrooms to a plate lined with paper towels and season with a pinch of coarse salt. Repeat with the rest of the mushrooms. 
  6. When the mushrooms are all cooked, cut the lemon in half and squeeze the juice over the mushrooms.
  7. Assemble the po’boys by cutting the French rolls in half lengthwise, but leaving one side attached. Spread some of the remoulade sauce on each side and layer lettuce, tomato slices, and pickles. Add the fried mushrooms to each sandwich and top with a bit more of the remoulade sauce. 
  8. Serve immediately.
