- Ingredients:
- 1 package of FunGuy shiitake mushrooms
- 2 cloves garlic
- 1 teaspoon soy bean oil or vegetable oil
- ½ cup wakame seaweed
- ¼ cup soy sauce
- 2½ cups vegetable broth
- 1-2 teaspoons miso paste
Every kitchen should have a bottle of fish sauce lurking in a dark corner for when a dash of umami flavor is needed to make a recipe complete. But what if you can’t find it in the local store or the recipe needs to be plant based? No worries, just make it yourself!
Our FunGuy shiitake mushrooms are a foolproof ingredient, along with wakame seaweed, and miso to make your own tasty vegan replacement for that fishy sauce.
Make sure to use it in your next pot of pho, with cold Thai glass noodle salad, or in your favorite Asian dipping sauce!
DIRECTIONS:
- Brush off any debris from the FunGuy shiitake mushrooms with a damp cloth, trim the ends of the stems and set aside. Peel and crush the garlic cloves.
- Heat the oil in a medium sized pot over medium heat. Once the oil is hot, add the garlic and sauté about 1-2 minutes or until golden brown, stirring frequently and making certain to keep an eye on it so it does not burn.
- Add the seaweed, soy sauce, broth, and mushrooms to the pot and stir well to combine, and bring it to a boil. Reduce the heat to low and let it simmer until half of the liquid has evaporated; about 10-15 minutes. Turn off the heat, strain the liquid, squeezing the sauce out by pressing on the mushrooms and seaweed, and return it to the pot. Stir the miso into the sauce and transfer it to a bottle or jar and cover with the lid, but do not seal it.
- Allow the “fish” sauce to cool to room temperature before sealing with the lid and keep in the refrigerator until ready to use.
- Use this FunGuy shiitake sauce as a 1 to 1 replacement for fish sauce in recipes.
