- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 2 tablespoons sesame oil, divided
- 2 tablespoons teriyaki sauce, divided
- 1 ½ tablespoons rice wine vinegar
- 3 tablespoons soy sauce
- 2 teaspoons sesame seeds
- 8oz dry soba noodles
- water
- 2 spring onions, sliced
Looking for a quick and easy meal that even the pickiest of eaters will be excited to try? No need to say “Open sesame!” to get those hungry mouths to happily slurp up these sweet and tangy noodles.
What makes this recipe even better is it’s done in 15 minutes and healthy too!
DIRECTIONS:
- Heat 1 tablespoon of sesame oil in a sauté pan over medium heat. Add the FunGuy mushrooms to the pan and allow them to cook about 5 minutes or until lightly browned.
- In a small bowl, whisk 1 tablespoon teriyaki sauce and ½ tablespoon rice wine vinegar together. Pour it over the mushrooms in the pan and stir well to combine. Cook the mushrooms 2 more minutes and remove the pan from the heat.
- While the mushrooms are cooking, bring a pot of water to a boil over high heat. Once the pot is boiling, add the soba noodles and allow them to cook 5-8 minutes or according to the package.
- Fill a large bowl with cold water in the sink and transfer the cooked, and drained, soba noodles to the bowl immediately. Drain the noodles of excess water and transfer them to a large bowl.
- In another bowl whisk together the rest of the sesame oil, teriyaki, vinegar, soy sauce, and sesame seeds.
- Add the cooked mushrooms to the soba noodles and pour the sesame oil and teriyaki mixture over the noodles and toss together. Add 3/4ths of the spring onion to the bowl and toss again.
- Serve immediately with the rest of the spring onions on top.
