• Ingredients:
  • water
  • salt
  • 8 oz dry tagliatelle pasta
  • 1 tablespoon olive oil
  • 2 whole garlic cloves, crushed
  • 8oz package of sliced FunGuy white button mushrooms
  • 5oz pancetta, diced
  • 4 egg yolks
  • 4 ounces grated Pecorino Romano cheese (or Parmesan)
  • fresh flat leaf parsley
  • ground black pepper

This holiday season make something utterly decadent in a deliciously FunGuy way!

Classic tagliatelle carbonara is just that with it’s luxurious and creamy sauce, crispy bits of pancetta, and slices of golden brown mushrooms. The best part? It takes less than half an hour to make and it feels extra elegant despite it’s simplicity!

DIRECTIONS:

  1. Bring a pot of water with a large pinch of salt to a boil over high heat. Add the tagliatelle to the pot and let it cook 8 minutes, or until tender. Drain the pasta of excess water, reserving a cup for the sauce, but make sure the pasta stays wet. Return the pasta to the pot and cover until ready to use, if necessary. 
  2. While the pasta cooks, prepare the FunGuy mushrooms, pancetta, and sauce. 
  3. Heat the olive oil in a sauté pan over medium heat and add the garlic cloves to the pan and allow them to cook in the oil about 2-3 minutes, or until very fragrant. Remove the cloves and either discard, or peel and mince and return to the pan if desired. Add the FunGuy mushrooms and diced pancetta to the pan and sauté 4-5 minutes, or until they have browned and crisped a bit a round the edges. Turn off the heat and cover to keep warm.
  4. In a bowl, stir the egg yolks and ¾ of the cheese together. Add 2-3 tablespoons of the reserved pasta water to the mixture and stir well. 
  5. Remove the lid from the pan and transfer half of the mushrooms and pancetta to a bowl before adding the wet pasta to the pan and stir with the mushrooms and pancetta. Add the egg mixture to the pan and toss well to coat the pasta evenly. Add the reserved pasta water, a couple tablespoons at a time, to make the sauce creamier. 
  6. Serve immediately with the remaining mushrooms and pancetta, the remaining cheese, fresh parsley leaves and freshly ground black pepper.
