• Ingredients:
  • 4 medium sized russet potatoes, peeled
  • 8oz package of sliced FunGuy white button mushrooms
  • 6 garlic cloves, minced
  • 2 teaspoons dried parsley
  • 1½ teaspoons dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon coarse salt
  • ¼ cup olive oil, plus 2 tablespoons
  • 4 eggs
  • 3 green onions, chopped
  • cayenne pepper flakes
  • hot sauce (optional)

Weekend mornings are a perfect time to have an egg sunny side up and some crispy potatoes, but the FunGuy has a better idea!

How about some home made baked garlic and herb french fries, a whole bunch of our sliced FunGuy button mushrooms, and top them with sunny side up eggs? Just add a dab or two of hot sauce and some green onions on top and you’re ready to get your weekend started!

DIRECTIONS:

  1. Preheat oven to 425F. Line a baking sheet with parchment paper.
  2. On a cutting board, peel and cut the potatoes into thin sticks about ½ inch thick and transfer to a large bowl with cold water to soak for 10-15 minutes while preparing the seasoning and allowing the oven to preheat. 
  3. In a small bowl mix the garlic, parsley, oregano, black pepper, and salt until combined.
  4. When the potatoes have finished soaking, drain them and lay them out on paper towels and pat dry to remove excess water. Transfer the potatoes and FunGuy mushrooms to a large mixing bowl and drizzle the ¼ cup of olive oil over them and toss to coat. Add the mixed seasoning and toss again to season the potatoes and mushrooms well. Separate the mushroom to reserve for later. 
  5. Spread the uncooked fries over the baking sheet in a single layer and transfer to the oven to bake for 25 minutes. Remove the baking sheet from the oven, flip the fries and add the sliced mushrooms onto the baking sheet, and return them all to the oven to bake another 15 minutes or until the potatoes are golden brown and the mushrooms have been cooked through. 
  6. While the potatoes and mushrooms finish cooking, prepare the eggs. 
  7. Heat the rest of the oil in the skillet and reduce the heat to medium low. Crack the eggs into the pan carefully. Let them cook 2-5 minutes or until the white is firm and no longer wet and the edges are lightly crisped. 
  8. Remove the mushrooms and fries from the oven and divide them between 4 dishes. Top each dish with an egg sunny side up, green onions, and finish with cayenne pepper flakes and hot sauce if desired.
  9. Serve immediately!
