- Ingredients:
- 1 cup white rice
- 1 ½ cups water
- 8oz package of FunGuy shiitake mushrooms
- 2 garlic cloves
- 1 inch ginger root
- 2 green onions (optional)
- 4 tablespoons teriyaki sauce
- 2 tablespoons honey
- 1½ tablespoons soy sauce
- 2 tablespoons sesame oil
- sesame seeds (optional)

Our shiitake mushrooms are creating quite a stir with this sweet and sticky teriyaki honey sauce that takes less time than a pot of steamed rice!
Not feeling like rice? Try some quick noodles or some steamed veggies instead!
DIRECTIONS:
- Combine the water and rice in a pot and bring it to a boil over high heat. Reduce the heat to low and cover with a lid. Allow the rice to cook 15 minutes, or until it seems most of the water has evaporated. Remove from heat, leaving the lid on and allow the rice to steam another 10 minutes. Fluff with a fork when ready to serve.
- While the rice cooks, prepare the sauce and mushrooms.
- Brush off any debris from the FunGuy mushrooms with a damp cloth, trim the ends of the stems, and set aside. Peel and finely mince the garlic and ginger and transfer to a bowl. Trim the ends of the green onions, slice, and set aside for garnish.
- In the bowl with garlic and ginger, add the teriyaki sauce, honey, and soy sauce and whisk well to combine. Set aside.
- Bring a pot of water to a boil over high heat. Drop the shiitake mushrooms into the pot and cook 1-2 minutes. Drain the mushrooms in a strainer.
- In a wok or large sauté pan, heat the sesame oil over medium high heat. Add the mushrooms to the pan and cook 2 minutes. Pour the teriyaki sauce mixture over the mushrooms and stir fry the mushrooms, constantly stirring, until the sauce has reduced down and created a thick coating over the mushrooms; 5-7 minutes.
- Sprinkle sesame seeds and the chopped green onion on top and serve!
