- Ingredients:
- 8oz package of FunGuy Crimini mushrooms
- 2 garlic cloves
- ¼ cup plain cream cheese, room temperature
- 1 teaspoon dried dill
- 1 ball of pre-made pizza dough
- Flour for rolling
- 2 tablespoons olive oil
- 8 ounces sliced smoked salmon
- 1 ½ cup mozzarella cheese
- 1 lemon
- 1 tablespoon capers
Pizza for breakfast isn’t a new idea, no, but it’s usually cold and leftover from a day or two before. But what about fresh hot straight from the oven breakfast pizza? Sounds delicious, right?
That’s why we came up with this new FunGuy smoked salmon pizza!
We know this may not be a mid-wee week way to start the day, it’s perfect for a slow Saturday or Sunday morning.
DIRECTIONS:
- Preheat oven to 425F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy crimini mushrooms with a damp cloth, trim the ends and slice thinly. Peel and finely mince the garlic cloves. In a small bowl, mix the garlic, cream cheese, and dill together until smooth.
- Flour a flat surface with flour and place the pizza dough on it. Roll out the dough with a rolling pin about 1/2 inch thick circle and bush the top of the dough with olive oil. Spread the cream cheese mixture over the dough, leaving an inch or so around the crust without any cheese.
- Sprinkle half of the mozzarella over the dough, then top with two thirds of the crimini mushroom slices and pieces of the smoked salmon. Finish the pizza with any left over mozzarella, mushrooms, and salmon and top with the capers. Cut the lemon in half and squeeze half over the pizza.
- Bake the pizza in the oven for 10-15 minutes, or until the cheese has melted and the dough has risen and become golden brown around the edges.
- Remove the pizza from the oven, let cool 5 minutes, squeeze the other half of the lemon over the pizza, and cut and serve.
