- Ingredients:
- water
- 16 oz package of udon noodles
- 1 package of FunGuy shiitake mushrooms
- 3 spring onions
- 4 garlic cloves
- 1½ tablespoons oyster sauce
- 1½ tablespoon soy sauce
- 1 tablespoon teriyaki sauce
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 2 tablespoons peanut or vegetable oil
- 1 cup edamame beans, shelled
One of the most difficult decisions in daily life is deciding what to make for dinner. Not today, because the FunGuy has it covered!
This 20 minute (start to finish) recipe for Yaki udon noodles and shiitake mushrooms, is not only quick, but easy and delicious too. We guarantee it’ll leave everyone wanting it to be a regular addition to the busy week recipe rotation. Especially the cook!
DIRECTIONS:
- Bring a pot of water to a boil. Once it has started boiling, add the udon noodles and cook 3-5 minutes, or until just cooked through. Drain the noodles of excess water and set aside.
- While the noodles cook, prepare the rest of the ingredients.
- Brush off any debris from the FunGuy mushrooms with a damp cloth and cut them in half. Trim the ends of the spring onions and cut them into ½ inch long pieces. Peel and mince the garlic.
- In a bowl, whisk the oyster sauce, soy sauce, teriyaki sauce, honey, and rice vinegar until mixed well and set aside.
- Heat the oil in a wok or deep skillet over medium-high heat. Add the garlic to the pan and cook 1 minute. Add the white part of the onions and cook another 1 minute. Add the shiitake mushrooms to the pan and stir-fry 4-5 minutes.
- Add the udon noodles, the green part of the onion, edamame, and the sauce to the pan and stir well to combine, letting them cook 2-3 minutes, or until the noodles are evenly coated with the sauce.
- Turn off the heat, taste, and add more soy or honey to taste. Serve immediately.
