• Ingredients:
  • 8oz package of FunGuy shiitake mushrooms
  • 2 medium bok choy bunches
  • 5 spring onions
  • 1 large carrot
  • 1 inch ginger root
  • 8 cups water, plus for cooking the soba
  • ¼ cup soy sauce
  • ¼ cup dried wakame seaweed
  • 4 tablespoons white miso paste
  • 6 ounces dried soba noodles
  • ½ teaspoon black sesame seeds
  • ½ teaspoon toasted sesame seeds

Put down that package of cheap plain ramen! We don’t want you to have another bowl of something that is sobaring! 

What you need is a warm bowl of this healthy and vegan friendly dashilicous FunGuy shiitake and bok choy soup that is guaranteed to make your tastebuds say “Miso happy!”

DIRECTIONS:

  1. Brush off any debris from the FunGuy shiitake mushrooms with a damp cloth. Cut the large mushrooms into thin slices, and keep the small ones whole. Transfer the sliced mushrooms to a medium sized soup pot and set the small ones aside for later. 
  2. Wash the bok choy, spring onions, and carrot well. Trim the root end from the bok choy, pull apart the large leaves and slice them into ½ inch strips, and cut the small inner bok choy in half. Trim the roots from the onions and cut all but 1 into 1 inch pieces, thinly slice and set aside the reserved onion. Remove the ends from the carrot, peel, and then cut it into very thin matchsticks and set aside with the onion and whole shiitake mushrooms. Peel the ginger and cut it in half before adding it to the pot with the sliced mushrooms. 
  3. Pour the water and soy sauce into the pot. Add the wakame seaweed to the pot and bring it to a simmer over medium high heat. Reduce the heat to medium low, allowing the broth to simmer 30 minutes. 
  4. Transfer some of the wakame, shiitake, and onions to a bowl to make room for the bok choy and whole mushrooms. Add the bok choy, whole mushrooms, and carrot to the broth and allow them to simmer for 5-7 minutes. Turn off the heat and add the miso to the broth, stirring well to combine, cover and allow it to sit while preparing the soba noodles. 
  5. Bring a pot of water to a boil over high heat. Drop the soba noodles into the pot and allow them to cook 4-5 minutes or until tender. Drain and rinse with cold water. 
  6. Ladle the miso soup broth with the shiitake mushrooms, bok choy, and some of the carrot into a bowl. Transfer some soba noodles to the bowl and add a little more broth on top. Add sliced spring onions and sesame seeds on top and serve immediately.
