- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 1 small onion, diced
- 1 small green bell pepper, diced
- 1 medium tomato, diced
- 1 tablespoon olive oil
- 1 cup dry rolled oats
- 2 cups water
- Salt and pepper to taste
- 4 strips of bacon
Roll on over honey and fruit oatmeal! The FunGuy is here with a savory oatmeal that will rival any of that sweet stuff.
These creamy oats include tomato, bell pepper, onion and bites of mushroom throughout. Top that with bacon bits, and this regular breakfast dish is good for more than just morning!
DIRECTIONS:
- Heat olive oil in a pan over medium heat. Add in the onion, pepper and mushrooms and allow to cook 4-5 minutes. Remove the mushrooms and set aside.
- Stir the oatmeal into the onions and pepper then add the water and stir again to combine. Bring to a simmer, stirring frequently.
- Once the oats have started to thicken and the liquid has evaporated a little stir in the tomato and the mushrooms and season with salt and pepper.
- While the oatmeal is cooking, prepare the bacon.
- Place two layers of paper towels on a microwave safe plate. Lay the bacon strips on the paper towels and lay two paper towels on top of the bacon. Microwave the bacon on high for 4 minutes. If the bacon isn’t crisp enough to your liking, microwave an additional 1-2 minutes checking every 30 seconds. Remove the bacon from the oven when cooked and allow to cool 2-4 minutes before breaking it up.
- Serve oatmeal hot with the crumbled bacon on top!
