- Ingredients:
- 3 tablespoons olive oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 8oz package of sliced FunGuy white button mushrooms
- 15 oz can cannellini beans, rinsed and drained
- 1½ cups vegetable broth
- 1 cup fresh or frozen peas
- 1 lemon, juiced
- salt
- black pepper
Spring is here and with it comes days upon days of rain, and every FunGuy knows that rainy days require a bowl of something comforting with plenty of flavorful sauce!
This week’s recipe is the perfect dish for just that, consisting of a combination of healthy white beans and sweet spring peas simmered with a simple base of quickly sautéed onions, garlic, and our sliced mushrooms. Just don’t forget the crusty bread to sop up the bottom of the bowl!
DIRECTIONS:
- Heat the olive oil in a sauté pan over medium high heat. Add the onion and garlic, sautéing 2-3 minutes, or until lightly browned. Add the FunGuy mushrooms and sauté an additional 4-5 minutes or until browned.
- Add the beans and stir well. Pour in the vegetable broth, stirring well. Increase the heat to high and bring it just to a boil, then reduce the heat to medium and allow to simmer about 5-10 minutes, or until it has become thick and saucy.
- Stir the peas and lemon juice into the mix and allow to cook 2-3 minutes for frozen and 4-5 minutes for fresh, or until tender. Turn off the heat and season with salt and black pepper to taste.
- Serve immediately.
