• Ingredients:
  • 8oz package of FunGuy portabella mushrooms
  • 4 cloves garlic
  • 1 pound fresh (or frozen green beans)
  • ½ tablespoon onion powder
  • ½ tablespoon curry powder
  • 1 ½ teaspoons salt
  • 1 teaspoon cayenne
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander seeds
  • ½ teaspoon powdered cumin
  • ½ teaspoon ground ginger
  • ½ teaspoon ground allspice
  • 3 tablespoons olive oil, divided
  • 1/3 cup shredded gouda cheese

To bean or not to bean, that is never the question when it comes to this deliciously simple FunGuy recipe! 

These roasted green beans and FunGuy portabella mushrooms are so easy and tasty, you’ll wonder why you haven’t tried it before.

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the mushroom stems and thinly sliced the mushrooms. Peel and mince the garlic. Wash the green beans thoroughly and trim the ends. Transfer everything to a large bowl. 
  3. In a small bowl mix the onion powder, curry powder, salt, cayenne, paprika, coriander, cumin, ginger, and allspice. Add the seasoning to the bowl with the green beans and mushrooms. Drizzle 2 tablespoons of the olive oil into the bowl and toss well to coat the mushrooms and green beans in the oil and seasoning. 
  4. Spread the green beans in a single layer in the baking sheet. Lay the mushroom slices on top and drizzle with the remaining olive oil. Sprinkle the cheese on top. 
  5. Roast the green beans and mushrooms for 15-20 minutes, or until the cheese has melted and the mushrooms have lightly browned. Remove the oven and allow to cool 5 minutes. 
  6. Serve immediately.
