- Ingredients:
- 4 tablespoons olive oil, divided
- 8oz package of sliced FunGuy white button mushrooms
- 2 garlic cloves, minced
- 2 cups shredded beetroot
- ¼ cup orange juice
- 1 tablespoon Dijon mustard
- 2 tablespoons balsamic vinegar
- 6 cups arugula
- 1 orange
- salt
- black pepper
Need a light, citrusy, and healthy salad that can be the main or a flavorful side? Then this orange and beetroot FunGuy salad recipe is just the thing!
Juicy sweet oranges not only make up the base for a light vinaigrette, but also are added to a handful of our garlic sautéed mushrooms and healthy vibrant shredded beetroot. Add some toasted bread and your favorite protein, and you have a well rounded, light, and delicious meal!
DIRECTIONS:
- Heat half of the olive oil in a sauté pan over medium high heat. Add the garlic to the pan and sauté 1 minute. Add the FunGuy mushrooms to the pan and sauté 3-5 minutes or until lightly browned. Transfer the mushrooms to a bowl and cover to keep warm.
- In the same pan, add the shredded beetroot and sauté in the remaining olive oil and garlic until tender; about 4-5 minutes. Turn off the heat and cover until ready to add to the salad.
- In a bowl whisk together the remaining olive oil, orange juice, Dijon mustard, and balsamic vinegar. Taste and season with salt and black pepper as needed.
- Place the arugula in a mixing bowl and add the sautéed beets and mushrooms. Pour the vinaigrette over the salad and toss well to coat with the dressing. Peel and divide the orange into sections and add it to the salad.
- Serve immediately!
