• Ingredients:
  • 10oz package of FunGuy Mushroom Stuffers
  • 1 avocado
  • 1 small onion
  • 3 cloves garlic
  • 3 tablespoons flour
  • 1 tablespoon fajita seasoning
  • 1½ cups milk
  • 8 oz shredded mozzarella cheese
  • salt and pepper to taste

These eerie-sistiblly cheesy macaroni stuffed mushrooms use a homemade macaroni recipe as the base before stirring them up with creamy avocado to turn them from a basic ghostly white to monster green. We tossed in a bite of fajita seasoning just to make sure to these stuffers are creepin’ it real.

They’re certain to make your Halloween spook-tacular!

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Transfer the mushroom caps, hole side up, to the baking sheet. Remove the skin and seed from the avocado and mash it in a bowl. Peel the onion and garlic. Dice the onion and mince the garlic.
  3. Bring a pot of water to boil on the stove and add the macaroni pasta. Cook 7-9 minutes or until cooked through. Drain the pasta of excess water and return it to the pot, but not to the heat. 
  4. While the pasta cooks, prepare the cheese sauce. 
  5. In a large sauté pan melt the butter over medium heat. Add in the garlic and onion and allow to cook 1 minute. Whisk in the flour to create a thick paste. Allow it to cook 1-2 minutes or until it smells lightly nutty. Pour in the milk and add the fajita seasoning, whisking the entire time. Bring the mixture to a simmer, stirring frequently. 
  6. Stir in the cheese and allow it to melt. After the cheese has melted, stir in the mashed avocado until it has become smooth and green. Add the macaroni to the pan and stir well to coat the macaroni with the avocado cheese sauce. Turn off the heat.
  7. Spoon the mac and cheese into the mushroom caps and place the stuffed mushrooms in the oven to bake for 10-15 minutes or until they macaroni has browned lightly. 
  8. Remove the mushrooms from the oven and allow them to cool 5 minutes before serving.
