- Ingredients:
- 4 FunGuy portobello mushrooms
- 2 tablespoons olive oil
- ½ teaspoon dried oregano
- pinch coarse salt
- ½ cup tomato sauce
- 1 teaspoon Italian herb seasoning
- ½ teaspoon coarse salt
- 1 cup shredded mozzarella cheese
- 12 pepperoni slices
- 4 cherry tomatoes, sliced
- fresh basil leaves
Has it been too busy to cook lately, but you’ve been craving the taste of homemade pizza since last week? Then the FunGuy has the perfect portobello recipe for you!
Our easy pizza stuffed portobello mushrooms only require a bit of tomato sauce, a handful or two of shredded mozzarella cheese, and our meaty Portobello mushrooms. Toppings are always cook’s choice, but a few slices of pepperoni and sliced cherry tomatoes are ours!
DIRECTIONS:
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Transfer the mushrooms to a large bowl.
- Drizzle the olive oil over the mushrooms and sprinkle the oregano and pinch of salt over them. Toss well to coat each mushroom with the oil and seasoning Transfer the mushrooms to the baking sheet and bake in the oven for 10-15 minutes or until they are just tender and liquid has pooled in the middle.
- In a small bowl mix the tomato sauce together with the Italian herb seasoning and salt.
- Remove the mushrooms from the oven and pour out any liquid that has accumulated in the cap, and return them to the baking sheet. Spoon the tomato sauce into each mushroom cap, add some cheese, and top with 3 pepperoni slices on each. Top each with cherry tomato slices and a little more cheese.
- Return the mushrooms to the oven and let them cook an additional 5-10 minutes, or until the cheese has turned a golden brown.
- Remove the mushrooms from the oven and top each mushroom with fresh basil leaves and serve immediately.
