- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 8 sundried tomatoes
- 5-6 fresh basil leaves
- 1 sprig oregano, stem removed
- 15oz can cannellini beans, drained and rinsed
- ½ teaspoon black pepper
- ½ teaspoon coarse salt
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon red pepper flakes
- 2 tablespoons olive oil
- 1 large lemon, juiced
Jazz up lunch this week with a white bean salad made the FunGuy way!
This salad infuses summer into it with intense flavor from sundried tomatoes, fresh basil leaves and oregano, and a squirt of lemon juice. Just toss it together with some white beans and mushrooms and let marinate for an hour or so.
What’s really great is that not only can it be served cold, but can be sautéed for a few minutes after marinating to make a delicious warm salad too!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth and cut them into quarters. Stack the sundried tomatoes and cut them into thin strips. Stack the basil leaves and roll them into a tight tube before slicing them into thin ribbons. Put all of them in a large bowl and add in the cannellini beans.
- In a small bowl mix the pepper, salt, onion powder, garlic powder, and red pepper flakes. Sprinkle the seasoning over the mushroom and bean mixture. Pour in the olive oil and lemon juice and stir well to evenly coat and distribute the ingredients throughout.
- Cover with plastic wrap and refrigerate at least one hour to marinate.
- Serve as a cold or feel free to quickly sauté these beans and mushrooms over medium high heat for about 5-7 minutes for a warm dish instead!
