• Ingredients:
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 garlic cloves, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • pinch of salt
  • 3 oz feta cheese, crumbled
  • 2 tablespoons plain Greek yogurt
  • 1 lemon, juiced
  • coarse salt
  • fresh cracked black pepper
  • 24 crackers (approximately)

We’ve whipped up a bowl of salty feta, creamy Greek yogurt, and just the right amount of zesty lemon to make a flavorful spread for these bite sized tidbits that have been crowned with a mix of our sautéed mushrooms and onions. 

Best part? These are done in 20 minutes or less, and everything can be prepped in advance, making it easy to get out of the kitchen and back to the party, like the FunGuy you are!

DIRECTIONS:

  1. Heat the olive oil in a sauté pan over medium-high. Add the onion and cook 1 minute. Next, add the garlic and cook another minute, then add the FunGuy mushrooms to the pan and sauté 5-7 minutes, or until browned around the edges. Turn off the heat and cover to keep warm. 
  2. In a bowl, stir together the feta cheese, Greek yogurt, and lemon juice, mashing the feta into the mixture as it is combined. Taste and season with salt and black pepper as necessary. 
  3. To serve, spoon the feta and yogurt mixture onto each cracker and top with the sautéed mushrooms and onions.
