- Ingredients:
- 2 tablespoons olive oil
- 8oz package of sliced FunGuy white button mushrooms
- 12 slices of deli ham
- 4 tablespoons pesto
- 1½ tablespoons mayonnaise
- 4 croissants
- 2 tomatoes, sliced
- 4 green lettuce leaves, chopped
- 2 pinches of salt
A good freshly baked croissant is buttery, flaky, and oh so good. But what about the day after? They’re still tasty, but with the freedom to be transformed into something fantastic like our new recipe for a FunGuy croissant sandwich!
We’ve taken day old croissants and added an intensely flavored and creamy pesto spread, slices of ripe tomato, salty deli ham, and our sautéed button mushrooms and turned it into an amazing sandwich. So good you’ll be grabbing extra croissants every week!
DIRECTIONS:
- Heat the olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms and sauté about 5 minutes, or until lightly browned. Once the mushrooms have cooked, transfer to a bowl and keep covered. Lay the ham slices in the pan in a single layer, working in batches if necessary, and let them brown lightly and heat through. Transfer the ham to a plate and turn off the heat.
- While the mushrooms and ham cook, prepare the pesto spread and croissants.
- In a bowl, mix the pesto and mayonnaise together until smooth and creamy. Cut the croissants in half lengthwise and open them.
- Spread the pesto mixture on both halves of the croissant and layer in the lettuce and tomato slices. Sprinkle a small pinch of salt over the tomato slices and layer the ham and mushrooms on top.
- Serve immediately!
