- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 4 tablespoons olive oil, divided
- 1 lime
- Pinch salt
- Pinch black pepper
- 1 pound skirt steak
- 8 6 inch flour tortillas
- 1 cup shredded sharp cheddar cheese
- Pickled sliced jalapenos
Everyone likes a good burger or hot dog at the family barbecue, but what about the delicious when grilled quesadilla?
Here’s just the recipe to play with your tortillas, and it’s all grilled up!
Grilled steak and mushrooms nestled on a bed of shredded cheddar and spicy jalapenos go right back to the grill it goes.
DIRECTIONS:
- Place the FunGuy mushrooms into a bowl with 1 tablespoon of olive oil. Season the mushrooms with salt and black pepper. Cut the lime in half and squeeze one half over the mushrooms. Toss to coat and set aside. Lay the skirt steak out on a cutting board and season both sides with salt and black pepper. Drizzle the other half of the olive oil on both sides and massage it into the meat.
- Prepare the grill by lightly oiling it with a paper towel and set the temperature to high.
- Once the grill is hot, place the steak on the grill and cook 7-8 minutes, flipping it half way through so that the outside is seared and the inside is cooked to 130F for medium-rare. Cook longer for more done, and less for a rarer steak.
- Transfer the steak to a cutting board, take a piece of tin foil and tent it over the steak, and allow it to rest for 10 minutes. Thinly slice once done resting.
- While the steak rests, prepare the mushrooms.
- Add the mushrooms to a grill grate or a pan that can handle the heat of the grill. Allow them to cook 3-4 minutes or until cooked through. Transfer the cooked mushrooms to bowl.
- To assemble the quesadillas layer one half of each tortilla with a bit of cheese, steak slices, mushrooms, jalapeños, more steak, and more cheese. Fold the tortilla over and place them on the grill grate. Cook until the cheese has melted and the tortilla has become crisp and browned, about 2-3 minutes each side. Repeat with the rest of the tortillas, mushrooms, steak, cheese and jalapenos Transfer the cooked quesadillas to a cutting board and allow them to cool 5 minutes before serving.
