- Ingredients:
- 3 tablespoons olive oil
- 8oz package of whole FunGuy white button mushrooms
- 8oz package of whole FunGuy crimini mushrooms
- 8oz package FunGuy oyster mushrooms
- 5oz padron peppers
- 4 cloves garlic
- ½ teaspoon coarse salt
This grilled FunGuy recipe uses three different mushrooms (white button, crimini, and oyster) and padron peppers that have been seasoned with the simple flavors of garlic, olive oil, and a pinch of salt. Couple that with the a hint of spice from the peppers and smokey fire that can only be found straight off the grill, these skewers provide a wonderful addition to any holiday barbecue!
Not to mention they are perfect for all the vegan FunGuys out there!
DIRECTIONS:
- First prepare 16 wooden skewers by placing them in a dish with water to soak for at least 15-30 minutes before using.
- Prep the grill by lightly brushing one tablespoon olive oil on the grill and set it to medium high or build a medium sized fire with charcoal.
- Brush off any debris from each of the FunGuy mushrooms with a damp cloth. Trim the ends of the button and crimini mushrooms and cut the oyster mushrooms into ½ inch pieces. Thoroughly wash the padron peppers and mince and mash the garlic with the flat side of the knife into a paste like texture.
- Put the mushrooms, garlic paste, and olive oil into a large bowl and toss well to coat. Alternate threading the mushrooms and peppers starting with the crimini, oyster, padron pepper, and white button mushrooms onto each skewer until each is full. Sprinkle the mushrooms and peppers with salt, rotating the skewers in order to season them evenly.
- Once the grill is hot, place the assembled skewers on the grill, turning frequently for 5-8 minutes or until the mushrooms are tender and the peppers have blistered on the outside. Remove the skewers from the grill and allow to cool a couple of minutes before serving!
Note: If padron peppers aren’t available, possible substitutes are shishito peppers or mini bell peppers can be used if you’re looking for a mild sweet flavor instead!
