- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 5 tomatoes
- 1 large cucumber
- 1 green bell pepper
- 1 small red onion
- 2 garlic cloves, minced
- 1/2 cup olives
- 1 cup feta cheese, crumbled
- 1 teaspoon fresh oregano leaves
- 4-5 fresh basil leaves, roughly chopped
- 2 tablespoons olive oil
- 4 tablespoons red wine vinegar
- Salt and black pepper to taste
Salad doesn’t have to be boring rabbit food! It can be exciting full-flavored rabbit food, especially when the FunGuy gets involved.
This Greek salad checks off that very tasty list with plenty of fresh veggies, earthy mushrooms, and salty feta and olives. Letting them soak in brine of fresh herbs, olive oil, and vinegar before serving gives this otherwise usual salad a kick that will leave you wanting more!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the ends and cut the mushrooms into quarters then place them into a large bowl.
- Remove the stems from the tomatoes and bell pepper and trim the ends from the cucumber, garlic cloves and onion. Thinly slice the onion and mince the garlic then add them to the bowl. Cut the tomatoes and cucumbers into 1 inch pieces and add to the bowl.Add the olives, feta cheese, oregano, basil, olive oil, and vinegar to the bowl and stir well. Taste and add salt and pepper as needed.
- Cover the bowl and refrigerate for at least 1 hour to allow everything to marinate.
- Serve with extra feta and basil on top.
